This year’s series of Meet The Producers dinners at HIX Oyster & Fish House welcomes a host of producers, chefs and foragers from the Dorset and Devon coast and countryside. Mark will be joined by our guest hosts for these one-off dinners in Lyme Regis.

A private chef, writer, cookery teacher and presenter, Tim Maddams has a love for the British countryside, wild food and quality seasonal produce. You may have seen Tim on your screens in Hugh Fearnley Whittingstall’s River Cottage series and Fish Fight campaign and continues to appear on television on various food shows. Lyme Bay Winery is located just a short drive from HIX Oyster & Fish House producing award-winning quality British wines, spirits and liqueurs in the beautiful Axe Valley. Their wines will be perfectly paired to Mark and Tim’s collaborative game menu featuring pheasant, grouse and more.

Claudio Sarfati produces organic mozzarella, burrata and ricotta in the village of Bishopstone in Wiltshire. Using organic milk from cows grazing just 500 meters away De Luca Mozzarella uses the traditional recipe from Claudio’s Nonno Antonio for this artisanal cheese. Claudio will be demonstrating how to make his exceptional mozzarella during this special evening.
Castlewood vineyard is a small boutique vineyard located just a short drive from HIX Oyster & Fish House producing stunning sparkling wines, in the Devon countryside. Their wines will be perfectly paired to Mark Hix’s menu featuring Claudio’s mozzarella, burrata and ricotta. Hear from Rob as he talks about his life as a dairy farmer turned winemaker and the stunning wines he and his family produce.

For everything you ever wanted to know about foraging, mushroom hunting, edible weeds and sea vegetables, John Wright will be our guest host for one night only to share his experience and knowledge of everything wild. Author or River Cottage Handbooks on hedgerows, edible seashore and mushrooms John regularly hosts talks and foraging trips along the Dorset coast.
Mark Hix’s menu of wild mushrooms, sea vegetables and edible flowers will be paired with Tonnix wines throughout. Sharing many a tale of his foraging forays, there will be plenty of time to chat to John and Mark throughout the evening.
